Boil water, add sugar and remove from heat. Stir until sugar is dissolved.
Follow directions for basic syrup. Add spices after water is off the heat and sugar is dissolved and whisk often as the syrup cools.
Optional: add cinnamon sticks to cooling syrup for more intense flavor.
Make a basic syrup. Split the vanilla beans and scrape out the vanilla. Add both the paste and beans to the syrup. Once the syrup has cooled add the vanilla extract.
To prevent clumps of cinnamon, boil the water with the cinnamon. Reduce the heat to a simmer and cook over low heat for 5 minutes, whisking often.
Optional: Add maple syrup.
