Mix dry ingredients together and make a well in the center. In a small bowl whisk together milk and egg and pour into the center of the flour mixture and stir briefly. Add the melted butter and stir, eliminating lumps. (Try not to over-mix, a few lumps are okay.) Heat a skillet over medium heat and oil lightly. When the skillet is hot pour 1/4 cup of mix for each pancake. Cook until top bubbles and begins to look dry. Flip and cook other side. Serve hot with butter and syrup.
