Preheat oven to 300 degrees. Melt the butter in a saute pan with olive oil and saute onions until soft and golden, apx. 15 minutes. If necessary saute onions in two batches if pan is not large enough. Spread half the onions in a casserole dish and layer sliced potatoes on top. Season with salt, pepper and thyme. Add another layer of onions and then another layer of potatoes. Season with salt, pepper and thyme. Pour beef stock into corner of the casserole dish. Cover tightly with foil and bake until all the liquid is absorbed, about 2-3 hours. Remove foil for last hour of baking for a crispier top.
