Spanish Rice

Pressure cooker: Heat oil on saute setting and stir in onion and rice. Heat until rice is nicely coated in oil and toasting and onion is sautéed. (Skip the onion if using salsa with onion.) Salt and generously sprinkle with cumin. Add water and salsa and cook with pressure for 3-6 minutes or whatever your machine reccomends.
Stove top: Follow all the above instructions in a sauce pot. Add 2 cups of water instead of 1 1/2. Bring to a boil, then turn to low, cover and cook for 20 minutes.
