In a large pot melt the butter, throw in the carrots, celery, and onion and cook over medium low until veggies are soft. Pour in recommended amount of water and seasoning packets (if there are any) and bring to a boil. Turn off heat, add bread cubes, stir, and cover to allow bread to soften.
Stuff turkey. Put extra stuffing in a casserole dish and reheat in the oven before serving.
